Cauliflower Cheese

Ingredients:

  • 1 large Cauliflower (cut into small chunks)
  • 1 tablespoon Salted Butter
  • 1 teaspoon Olive Oil
  • 1 teaspoon English Mustard
  • 1/2 Brown Onion (finely diced)
  • 1 Garlic Clove (minced)
  • 350ml Milk
  • 340g Mature Cheddar (grated)
  • 340g Mozzarella or Italian Blend (grated)
  • 85g Parmesan cheese (grated or powder)
  • 85g Blue Cheese (broken into chunks)
  • Black Pepper (to taste)
  • Salt (to taste)

Method:

  1. Put all your ingredients into slow cooker and stir well.
  2. Cook for around 4 hours on Low setting.
  3. If the sauce is too runny, cook on Low for another hour.

Lemon Garlic Chicken

Ingredients:

  • 500g Skinless Chicken Breasts
  • 1 tablespoon of Vegetable Oil
  • 2 tablespoons of Water
  • 100ml of Chicken Stock
  • 150ml fresh lemon juice
  • 1 Clove of Garlic (minced)
  • 2 teaspoons Dried Mixed Herbs
  • Salt (to taste)

Method:

  1. Rub chicken breasts in the Oil and Herbs, then brown in a frying pan.
  2. Put into Slow Cooker and add the rest of the ingredients.
  3. Cook on Low for 4-5 hours.

Creamy Italian Chicken

Ingredients:

  • 4 Skinless Chicken Breasts
  • 1 tablespoon Dried Italian Herbs
  • Tub of Cream Cheese/Philidelphia
  • 1 tablespoon Lemon Juice
  • 1 tablespoon of French Mustard

Method:

  1. Put the Chicken, Herbs, Lemon Juice and half a cup of water into Slow Cooker.
  2. Cook on Low for 4 hours.
  3. Add the Cream Cheese and the Mustard
  4. Cook for a further 30 mins on Low.

Meat Stuffed Peppers

Ingredients:

  • 500g Lean Lamb Mince
  • 5 Peppers (Any colour)
  • Half a Cauliflower (Grated)
  • 3 Tablespoons Tomato Paste.
  • 1 Brown Onion (Diced finely)
  • 2 Cloves of Garlic (Minced)
  • 1 teaspoon Cinnamon
  • 2 teaspoons of Mixed Dried Herbs

Method:

  1. Prepare your Peppers, by cutting off the tops and hollowing out.
  2. Mix the Cauliflower, Garlic, Onion, Cinnamon, Herbs and Mince together.
  3. Brown the Mince in a Frying Pan. (This is optional)
  4. Mix your Tomato Puree into your Mince Mix and stuff into each Pepper.
  5. Spray the Slow Cooker with Cooking Spray and put the Peppers in.
  6. Cook on Low for around 6 hours.

Chicken Coconut Curry

Ingredients:

  • 500g Skinless Chicken Breast
  • 1 Brown Onion (Finely diced)
  • 2tablespoons Curry Paste (Pick one to your taste)
  • 1 Large Cauliflower Head
  • 400ml Coconut Cream
  • 400g Spinach (Finely Chopped)

Method:

  1. Put all the ingredients, apart from the spinach, in the Slow Cooker and mix well.
  2. Cook on Low for 6-10 hours.
  3. Five minutes before serving, add the Spinach.
  4. You may need to do this in two batches.
